    Sweat aromatics

    In a large heavy-bottomed pot over medium heat, melt the unsalted butter. Add the finely diced onion, celery and carrot. Cook gently, stirring occasionally, until softened and translucent but not browned, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

    Make roux

    Sprinkle the all-purpose flour over the softened vegetables and stir to coat. Cook the flour-vegetable mixture, stirring constantly, for 2–3 minutes to remove the raw flour taste, forming a light blonde roux.

    Deglaze and add liquids

    Slowly whisk in the dry white wine to deglaze the pan, scraping any fond from the bottom. Cook until the wine reduces by about half, 2–3 minutes. Gradually whisk in the chicken stock until smooth. Bring to a gentle simmer and cook 8–10 minutes to thicken slightly.

    Combine dairy and simmer

    Reduce heat to low and whisk in the whole milk and heavy cream. Maintain a gentle simmer (do not boil vigorously) for 6–8 minutes to allow flavors to marry and the soup to thicken to a creamy consistency. Stir occasionally to prevent scorching.

    Finish soup and add crab

    Stir in the lump crabmeat, reserving 2 ounces for garnish if desired. Add the crab roe (if using) and dry sherry. Gently cook for 2–3 minutes just to warm the crab through — avoid prolonged stirring to keep lumps intact.

Seasoning & Finish

    Season the soup with Old Bay seasoning, kosher salt, freshly ground black pepper and a pinch of cayenne. Taste and adjust salt and spice as needed. Finish by stirring in the fresh lemon juice and most of the chopped chives and parsley, reserving a little for garnish.

    If the soup is too thick, thin with up to 1/2 cup additional warm chicken stock or milk until the desired consistency is reached. Keep the soup warm over the lowest heat setting while preparing bowls and garnishes.

Optional Garnish / Serving

    Ladle the she-crab soup into warmed bowls. Top each bowl with a spoonful of reserved lump crabmeat and a few butter-croutons or toasted brioche cubes. Sprinkle with the reserved chives and parsley, dust lightly with paprika, and finish with an extra drizzle (optional) of sherry or a small knob of butter.

    Serve immediately with lemon wedges on the side. Soup keeps refrigerated in an airtight container for up to 2 days; gently reheat over low heat, adding a splash of milk or stock to refresh consistency.
