Waffle Batter

For Waffle Iron

Method

Prepare Batter

  1. 1

    Mix dry ingredients

In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

  2. 2

    Combine wet ingredients

In a separate medium bowl or large measuring cup, beat the eggs lightly. Add the whole milk, melted unsalted butter (cooled slightly), and vanilla extract; whisk until homogenous.

  3. 3

    Make batter

Create a well in the center of the dry ingredients and pour the wet mixture in. Gently fold with a spatula until just combined — some small lumps are fine. Avoid overmixing to keep waffles tender.

Add Pearl Sugar

  1. 4

    Fold in sugar

Fold the pearl sugar into the batter gently, distributing the sugar evenly but resisting crushing the pearls. Let the batter rest for 5 minutes so baking powder hydrates and pearl sugar begins to slightly soften from moisture.

Cook Waffles

  1. 5

    Preheat and oil waffle iron

Preheat your Belgian-style waffle iron to medium-high heat according to manufacturer instructions. Brush or spray a thin layer of vegetable oil or nonstick spray on both plates just before cooking to prevent sticking.

  2. 6

    Portion batter

For a standard Belgian waffle, pour about 3/4 to 1 cup of batter (adjust for your iron size) onto the center of the preheated iron. Spread gently toward the edges if needed, but don’t press down.

  3. 7

    Cook until golden

Close the lid and cook until waffles are deep golden brown and crisp — typically 3 to 5 minutes depending on your iron. The pearl sugar will caramelize into little pockets; watch for occasional wisps of steam to slow and a fragrant toasted sugar aroma as cues the waffle is done.

  4. 8

    Remove and keep warm

Carefully remove the waffle with a nonmetal utensil. Transfer to a wire rack set over a baking sheet in a warm oven (200°F / 95°C) to keep crisp if cooking multiple waffles. Repeat oiling the iron lightly between batches and continue until batter is used.

Serve

  1. 9

Place waffle on a plate. Top with a pat (about 1 tablespoon) of unsalted butter so it melts into the nooks. Drizzle with warm maple syrup (about 2 tablespoons or to taste). If using, sprinkle a tiny pinch of flaky sea salt to enhance the caramelized pearl sugar flavor and add fresh berries or sliced pear alongside or on top.

  2. 10

Serve immediately while waffles are hot and crisp so the pearl sugar pockets retain their crunchy-caramel texture.
