In a separate medium bowl or large measuring cup, beat the eggs lightly. Add the whole milk, melted unsalted butter (cooled slightly), and vanilla extract; whisk until homogenous.

Create a well in the center of the dry ingredients and pour the wet mixture in. Gently fold with a spatula until just combined — some small lumps are fine. Avoid overmixing to keep waffles tender.

Fold the pearl sugar into the batter gently, distributing the sugar evenly but resisting crushing the pearls. Let the batter rest for 5 minutes so baking powder hydrates and pearl sugar begins to slightly soften from moisture.

Preheat and oil waffle iron
Preheat your Belgian-style waffle iron to medium-high heat according to manufacturer instructions. Brush or spray a thin layer of vegetable oil or nonstick spray on both plates just before cooking to prevent sticking.

For a standard Belgian waffle, pour about 3/4 to 1 cup of batter (adjust for your iron size) onto the center of the preheated iron. Spread gently toward the edges if needed, but don’t press down.
