    Dry the curds

    Pat the cheese curds dry with paper towels to remove surface moisture. Place them in a single layer on a tray and refrigerate for 10–15 minutes to firm slightly; this helps the breading adhere and reduces splattering during frying.

    Season the curds lightly with the kosher salt and black pepper, tossing gently to coat.

Breading Station

    Set up three shallow bowls or pie plates: one with the flour and cornstarch mixed together; one with the beaten egg and milk (add hot sauce if using) whisked until combined; and one with the seasoned breadcrumbs plus paprika, garlic powder, onion powder, and cayenne mixed thoroughly.

    Working in small batches (6–8 curds at a time), dredge each curd in the flour/cornstarch mixture, shaking off excess, then dip into the egg wash to coat completely, then press into the breadcrumbs so each curd is well covered. For an extra-crisp double-breaded coating: after the first breadcrumb coat, return each curd to the egg wash and then to the breadcrumbs again.

    Place breaded curds on a parchment-lined tray and chill in the refrigerator for 10–15 minutes to help set the crust. Chilling helps prevent the cheese from oozing out during frying.

Frying

    Pour the oil into a heavy-bottomed skillet or saucepan to a depth of about 1 to 1.5 inches (or use a deep fryer). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of breading into the oil — it should sizzle and brown in about 45–60 seconds.

    Fry the breaded curds in small batches so they have room and the oil temperature doesn't drop. Carefully add 6–8 curds and fry for 1.5–2 minutes, turning once, until they are golden brown and crisp. Avoid overcrowding.

    Use a slotted spoon or spider to transfer the fried curds to a wire rack set over a baking sheet or to paper towels to drain. Let them rest 1–2 minutes; the interior will remain very molten-hot. If desired, sprinkle with chopped parsley immediately.

    Serve the fried cheese curds hot with ranch, marinara, or your preferred dipping sauce. Warn diners that the centers will be very hot. Leftovers can be reheated briefly in a 375°F (190°C) oven for 5–7 minutes to re-crisp, but they are best eaten fresh.
