Method

Coffee

  1. 1

    Measure and grind

Weigh 35 grams (0.035 kg) of whole coffee beans. Grind to a medium grind appropriate for drip, pour-over, or automatic drip brewer (grit size like table salt).

  2. 2

    Heat water

Bring 240 ml of filtered water to a temperature of about 92–96°C (197–205°F). If you don't have a thermometer, bring to a boil then let rest 30 seconds.

  3. 3

    Brewing (drip/pour-over/automatic)

Place a paper filter (if using) in your dripper or machine and rinse with hot water to remove papery taste and preheat the vessel. Add the ground coffee to the filter. Pour or start brewing so that 240 ml of hot water passes through the grounds over about 2.5–4 minutes, yielding one cup of coffee (about 220–240 ml brewed coffee). For pour-over: bloom with ~40 ml water for 30–45 seconds, then continue pouring steadily.

  4. 4

    Alternative quick method (French press)

If using a French press, add the 35 g coffee to the carafe, pour 240 ml hot water, stir gently to saturate, steep for 4 minutes, then press the plunger down slowly and pour immediately.

Optional additions

  1. 5

    Add milk or cream

If you want a milky cup, heat or steam 30 ml milk (or plant-based milk) until warm and slightly frothy and pour into the brewed coffee. For a richer cup, stir in 15 ml heavy cream instead.

  2. 6

    Sweeten and garnish

Stir in 1 tsp sugar or sweetener to taste. Sprinkle a pinch (about 1 tsp) of ground cinnamon or cocoa powder on top if desired.
