Garlic Chili Aioli

In a small bowl combine mayonnaise, grated garlic, sriracha, lemon juice, rice wine vinegar, honey, salt, and pepper. Whisk until smooth. If the aioli is too thick, whisk in up to 1 teaspoon neutral oil or 1–2 teaspoons water to reach desired consistency. Taste and adjust seasoning. Chill while you prepare the rest of the dish (at least 15 minutes).
Corn Hash

Heat a large skillet over medium-high heat and add butter and olive oil. When the butter is foaming, add the diced onion and red bell pepper. Sauté 3–4 minutes until softened and beginning to brown.

Add the jalapeño and minced garlic and sauté 30–45 seconds until fragrant. Stir in the corn kernels, smoked paprika, thyme, salt, and black pepper.

Cook, stirring occasionally, 5–7 minutes until the corn is lightly charred in spots. Add 1/4 cup stock (or water) to deglaze the pan, scraping up browned bits. Continue cooking 1–2 minutes until the liquid mostly evaporates and the mixture is cohesive but not wet.

Stir in chopped chives or green onions, adjust salt and pepper to taste, then remove from heat and keep warm. Transfer to a serving platter or individual plates when ready to assemble.
Crispy Fried Oysters

Pat oysters dry on paper towels to remove excess moisture. Season lightly with 1/2 teaspoon kosher salt and a pinch of black pepper.

Set up a three-step dredging station: bowl 1 – buttermilk; bowl 2 – beaten eggs; bowl 3 – combined dry mix. In bowl 3 whisk together all-purpose flour, cornstarch, cornmeal, 1.5 teaspoons kosher salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, and cayenne pepper.

Working in batches of 4–6 oysters, transfer oysters to the buttermilk and let them soak 30 seconds to 1 minute, then dip into the beaten eggs, letting excess drip off, then press into the dry mix to fully coat. For an extra-crisp double-coat: after the first coat, return coated oysters to the egg and dredge again in the dry mix.

Heat a deep skillet or Dutch oven with oil over medium-high heat until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of the dry mix — it should sizzle and float immediately.

Carefully lower oysters into the hot oil in a single layer without overcrowding. Fry 2.5–3 minutes, turning once, until golden brown and crisp. Remove with a slotted spoon to a wire rack set over a baking sheet or paper towels to drain. Season immediately with a light sprinkle of kosher salt. Repeat with remaining oysters, maintaining oil temperature between 325–350°F (165–175°C).

Keep fried oysters in a warm (200°F / 95°C) oven on the wire rack for up to 15 minutes while you finish remaining batches; avoid stacking to keep them crisp.

Divide the warm corn hash among 4 plates (about 3/4 cup per plate). Spoon a generous dollop (about 1–2 tablespoons) of garlic chili aioli atop or beside each hash portion.

Serve immediately so oysters remain crisp. Leftover aioli can be refrigerated for up to 3 days; leftover corn hash keeps 2–3 days in the refrigerator.
