Method
Cherry-Lime Simple Syrup
Combine and simmer
In a small saucepan combine 1 cup chopped cherries, 1 cup sugar and 1 cup water. Add 1 teaspoon lime zest. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.
Reduce and infuse
Lower heat and simmer for 8–10 minutes, until cherries have softened and syrup has slightly thickened and taken on a deep pink/red color.
Strain and finish
Remove from heat. Stir in 1 tablespoon fresh lime juice. Pour the mixture through a fine-mesh sieve into a clean container, pressing on the solids to extract as much syrup as possible. Discard solids or reserve for another use.
Cool and store
Let syrup cool to room temperature. Transfer to a jar and refrigerate. Syrup will keep 1–2 weeks chilled. Yield: about 6–8 oz.
Cocktail Assembly
Prepare glass
Chill a large wine glass or Collins glass if desired. Fill the glass with about 1 cup of ice.
Build the drink
Pour 2 oz white rum, 3/4 oz St-Germain, 3/4 oz cherry-lime simple syrup and 1/4 oz fresh lime juice over the ice.
Garnish and serve
Garnish with a maraschino or fresh cherry on a pick, a thin lime wheel on the rim, and an optional edible cherry blossom or small edible flower floated on top. Serve immediately.
