Burger Patties

Make the patty blend

Gently combine the ground chuck, brisket, and short rib in a bowl. Sprinkle the kosher salt and freshly ground black pepper over the meat. Mix just until evenly distributed — avoid overworking to keep patties tender.

Form patties

Divide the mixture into two equal portions (roughly 8 oz each). Form each into a loose ball, then press into patties about 3/4-inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to discourage excessive puffing while cooking. Refrigerate patties briefly (10–15 minutes) if they become too soft to handle.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat until hot, then add 1 tsp neutral oil and swirl. Place patties in the pan (do not overcrowd). Cook for 3–4 minutes on the first side without pressing. Flip once and cook 2–3 minutes for medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, top each patty with a slice of provolone and cover the pan briefly to melt the cheese.

Buns & Spread

Prepare buns while patties rest: split brioche buns and spread the cut sides with a little unsalted butter. Toast cut-side down in a separate skillet over medium heat until golden brown (about 1–2 minutes). Meanwhile, in a small bowl, combine mayonnaise and Dijon mustard (if using). Spread about 1 tbsp mayonnaise mixture on the top bun and the remaining 1 tbsp on the bottom bun.

Cook bacon

In a separate skillet over medium heat, cook 4 strips of bacon until crisp, turning occasionally, about 8–10 minutes depending on thickness. Transfer cooked bacon to a paper towel–lined plate to drain.

Fry eggs

Wipe out the bacon skillet if necessary and return to medium-low heat. Add a light film of butter or oil. Crack eggs into the pan and cook sunny-side up until whites are set but yolks remain runny, about 2–3 minutes. Season with 1/8–1/4 tsp salt and a pinch of black pepper. For over-easy eggs, gently flip and cook an additional 10–15 seconds.

Assemble optional produce

If using, place mixed greens and tomato slices on the bottom bun or on top of the cheese-topped patty as preferred.

Assembly & Finish

Place one cheese-topped patty on each toasted bottom bun. Top each with two strips of crisp bacon. Carefully place a fried egg on top of the bacon. Add optional lettuce/tomato if using. Spread mayonnaise on the top bun and close the burger. Press gently to settle. Serve immediately while the egg yolk is runny and cheese is melted.
