Rinse shucked oysters briefly in a colander to remove excessive shell bits, then let drain for 5–10 minutes. Transfer oysters to a bowl and stir together buttermilk, Worcestershire sauce, hot sauce and 1 tsp salt. Add oysters and gently toss to coat. Refrigerate and marinate 20–30 minutes while preparing coating and oil.

Blackening Seasoning & Coating

In a shallow wide bowl or rimmed plate, combine paprika, kosher salt, black pepper, garlic powder, onion powder, cayenne and dried thyme. Stir to evenly distribute spices (this is your blackening seasoning).

In a second shallow bowl mix the flour, cornmeal and optional breadcrumbs. Add half of the blackening seasoning to the flour-cornmeal mix and whisk to combine. Reserve the remaining seasoning for finishing or extra dusting before searing.

Set up a dredging station: marinated oysters (bowl), seasoned flour-cornmeal (bowl), and a small tray to hold dredged oysters. Work in small batches to keep coating dry and even.

Frying & Searing

Heat oil for frying

Pour neutral frying oil into a large heavy skillet or Dutch oven to a depth of about 1¼–1½ inches (about 3–4 cups depending on pan). Heat over medium-high until oil reaches 350°F (175°C) on a thermometer. If you don’t have a thermometer, test with a small pinch of flour — it should sizzle steadily but not smoke immediately.

Dredge and fry oysters

Remove oysters from buttermilk one at a time, letting excess drip back into bowl. Dredge each oyster thoroughly in the seasoned flour-cornmeal mixture, pressing lightly so the coating adheres. Shake off excess and place on the tray. Fry in batches (do not overcrowd) for 1.5–2 minutes per side until golden brown and coating is crisp. Use a slotted spoon to transfer oysters to a paper towel-lined sheet to drain. Keep fried oysters warm in a low oven (200°F/95°C) on a wire rack while finishing remaining batches.

Optional sear for blackened finish

For a smoky, slightly charred blackened finish, heat a separate heavy skillet (cast-iron preferred) over medium-high heat. Add 1 tablespoon high-heat oil and 2 tablespoons butter. When butter foams and begins to brown lightly, add a single layer of fried oysters (do not crowd) and sear 20–45 seconds per side—just long enough to darken the edges and activate the blackening spices without overcooking the oyster interior. If you reserved extra blackening seasoning, lightly dust oysters in the pan just before flipping. Transfer seared oysters back to the wire rack in the warm oven.

Finishing & Garnish

Taste one oyster; adjust with a light sprinkle of sea salt if needed. Arrange oysters on a serving platter, squeeze lemon wedges over them, sprinkle chopped parsley, and spoon or serve creole/remoulade sauce alongside for dipping.

Serve immediately while hot and crisp. Recommend 3–4 oysters per person as an appetizer or 6–8 as a main when accompanied by sides.
