    Prepare and brown the sausage

    Heat a large nonstick skillet over medium heat. Add 1 tablespoon olive oil. When shimmering, add the bulk Italian sausage (remove from casings if using links) and break it up with a spatula into small crumbles. Cook, stirring frequently, until the meat is no longer pink and begins to brown, about 6–8 minutes.

    Add aromatics and spices

    Push the browned sausage to the side of the pan and add the diced onion to the center. Sauté for 3–4 minutes until softened and translucent. Stir in the minced garlic, crushed fennel seeds, dried oregano, and red pepper flakes (if using). Cook for 30–60 seconds until fragrant, then combine the onion mixture with the sausage.

    Season and finish

    Season with 1/2 tsp salt and 1/4 tsp freshly ground black pepper. Continue cooking for another 1–2 minutes to let flavors meld and any released moisture evaporate. Stir in chopped fresh parsley off the heat. Taste and adjust seasoning as needed. Remove from heat and let cool slightly before using as a pizza topping.

    Preheat oven and prepare dough

    Preheat your oven to 500°F (260°C). If using a pizza stone, place it in the oven while it preheats. Lightly flour a work surface and stretch or roll the pizza dough to your desired thickness and size. Transfer dough to a floured pizza peel or an oiled baking sheet.

    Assemble pizza

    Brush the dough edge lightly with 1 teaspoon olive oil. Spread 3/4 cup pizza sauce evenly over the dough, leaving a 1/2-inch border. Sprinkle 1 cup shredded mozzarella evenly over the sauce. Distribute the cooked Italian sausage crumbles evenly over the cheese. If desired, sprinkle 2 tablespoons grated Parmesan on top.

    Bake

    Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, until the crust is golden and the cheese is bubbling and lightly browned. Oven times vary—start checking at 8 minutes.

    Remove the pizza from the oven and let rest for 2–3 minutes. Slice and serve hot. Optionally garnish with extra chopped parsley or a drizzle of olive oil.
