Prepare bread and fillings
If using mayonnaise or mustard, spread mayonnaise on one slice of bread and mustard on the other. This adds moisture and flavor and helps prevent sogginess. Sprinkle the optional freshly ground black pepper and herbs over the mayo or directly on the cheese if using.

Assemble
Place the first slice of cheese directly on one piece of bread (mayo side up if used), then place the second slice of cheese on top of the first slice, and finish with the second slice of bread (mustard side down if used). Press gently to compact the sandwich.

Butter the exterior
Evenly spread the unsalted butter on the outside faces of both bread slices. Make sure the butter covers edge to edge to promote even browning and prevent sticking.

Cook
Heat a nonstick or cast-iron skillet over medium-low to medium heat. When hot, place the sandwich in the skillet. Cook for 2.5–4 minutes on the first side until golden brown and the cheese begins to melt. Flip the sandwich carefully and cook for another 2.5–4 minutes until the second side is golden and the cheese is fully melted. If the bread browns before the cheese melts, lower the heat and cover the pan with a lid for 1–2 minutes to trap heat and help the cheese melt without burning the bread.

Rest and slice
Remove the sandwich from the skillet and let it rest on a cutting board for 1 minute — this prevents hot cheese from running out and helps the sandwich hold together. Slice diagonally or down the middle, as preferred.

Serve immediately while hot. Optional accompaniments: tomato soup, pickles, or a simple salad. Store leftovers wrapped in foil in the refrigerator for up to 24 hours and reheat in a skillet or oven to restore crispness.
