Prepare the Mochi Dough

In a microwave-safe bowl, mix the glutinous rice flour, sugar, and water until smooth. Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another minute. Repeat this process once more until the dough is translucent and slightly sticky.

Shape the Mochi

Dust a clean surface with cornstarch. Once the dough is cool enough to handle, transfer it to the dusted surface and knead it gently. Divide the dough into 8 equal pieces. Flatten each piece into a circle about 3 inches in diameter.

Fill with Strawberries

Take a fresh strawberry, remove the stem, and place it in the center of each mochi circle. Gently fold the edges of the dough over the strawberry and pinch to seal, forming a ball.

Once all strawberries are encased in mochi, dust off any excess cornstarch. Serve immediately or refrigerate for a short time before serving.
