    Rinse the squid legs under cold water and pat dry thoroughly with paper towels. Trim any cartilage or beaks if present. Transfer to a shallow bowl or resealable bag.

    Combine olive oil, lemon juice, minced garlic, smoked paprika, sea salt, and black pepper in a small bowl. Whisk to emulsify.

    Pour the marinade over the squid legs, turning to coat evenly. Marinate in the refrigerator for 20–30 minutes — no longer than 30 minutes so the acid doesn’t begin to firm the squid excessively.

    Prepare pan and aromatics

    Heat a large heavy skillet (cast-iron or stainless steel) over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. When the fat is shimmering and butter foaming, add the finely chopped shallot and sauté for 1 minute until softened but not browned.

    Sear squid legs

    Increase heat to high. Remove squid legs from the marinade, letting excess drip off. Working in a single layer (cook in batches if needed), add squid legs to the hot pan in a single layer. Sear 1 to 1½ minutes per side — you want a quick, strong sear so the legs stay tender. Avoid overcooking; total contact time should be about 2–3 minutes.

    Deglaze and finish

    Push the squid to the side, add the remaining 1 tablespoon butter to the pan. Carefully pour in the white wine to deglaze, scraping up browned bits with a wooden spoon. Let the wine reduce for 30–45 seconds. Toss the squid in the pan briefly to coat and finish cooking (another 15–30 seconds).

    Turn off the heat. Stir in lemon zest, chopped parsley, and a pinch of red pepper flakes. Taste and adjust seasoning with additional salt or lemon juice if desired.
