Rinse and pat dry
Rinse each softshell crab briefly under cold water to remove any grit. Place crabs on paper towels and pat dry thoroughly inside and out. Dry crabs will produce a crispier crust.

Optional trimming
If not already done by the fishmonger, remove the face, gills (paper-like feathery bits inside the front shell), and apron (small flap) with kitchen shears. Leave claws intact for presentation if desired.

Set up dredging station
In a shallow bowl, whisk together buttermilk and the egg. In a wide shallow dish, combine flour, cornmeal, salt, black pepper, paprika, garlic powder, and cayenne. Whisk to evenly distribute spices.

Coat the crabs
Working one crab at a time, dip the crab into the buttermilk-egg mixture, letting excess drip off, then press both sides firmly into the flour-cornmeal mixture to form an even coating. Shake off any loose flour and set crabs on a rack or plate. For an extra crispy crust, double-dip: return the crab to the buttermilk briefly then re-dredge in the dry mixture.

Heat the pan
Place a large skillet over medium-high heat. Add the butter and oil and heat until the butter foams and begins to turn a light golden color and the oil shimmers, about 1–2 minutes. The oil raises the smoke point so the butter won't burn but will brown for flavor.

Pan-fry crabs
Carefully add 2 crabs to the hot skillet, shell-side down first if they were butterflied or flat, or back-side down for whole presentation. Fry without moving for 2.5–3 minutes, until the underside is deep golden and crisp. Flip and cook the second side another 2–3 minutes. Adjust heat as needed to avoid burning while ensuring a golden crust. Cook remaining crabs in a second batch, adding a touch more butter if the pan gets dry.

Serve crabs immediately while hot and crispy with lemon wedges and optional mayonnaise or remoulade on the side. Place on crusty rolls for sandwiches or alongside a simple green salad. Recommend 1 crab per person as a main, or 2 per person as a hearty portion.
