Remove steaks from the refrigerator 30–45 minutes before cooking to come to room temperature. Pat dry thoroughly with paper towels.

Season both sides of the steaks evenly with the kosher salt and freshly ground black pepper. Set on a tray while you prepare the fruit.

Pit and slice the peaches/nectarines into 1/2-inch wedges. If using frozen blueberries, thaw briefly and drain excess liquid.

Place the steaks in the pan, pressing gently so they contact the surface. Sear without moving for 3–4 minutes until a deep brown crust forms. Flip and sear the other side 3 minutes for medium-rare (adjust time for thickness and desired doneness).

Reduce heat to medium. Add unsalted butter, thyme sprigs, and smashed garlic to the pan. Tilt the pan and spoon the melted butter over the steaks (baste) for 1 minute to flavor and finish cooking. Use an instant-read thermometer: 125–130°F for medium-rare, 135°F for medium.

Remove steaks to a cutting board and tent loosely with foil to rest for 6–8 minutes while you make the fruit seasoning sauce. Resting allows juices to redistribute.

Carefully wipe out the skillet if there is excessive browned residue, leaving fond bits for flavor. Return to medium heat and add the sliced peaches/nectarines. Sauté 2–3 minutes until they begin to soften and color.

Add blueberries, balsamic vinegar, light brown sugar, lemon juice, and soy sauce to the pan. Stir to combine, scraping up any browned bits. Cook 2–4 minutes more until the blueberries begin to release juices and the sauce slightly thickens.

Season the sauce with red pepper flakes and taste. Adjust with a pinch more sugar or a squeeze more lemon if needed to balance sweet-tart flavors. Simmer another 1 minute so the flavors meld.

Slice the rested steaks against the grain into 1/4-inch slices. Arrange on a warm platter or plates.
