Dol-sot Bibimbap Recipe

Rice

Method

Rice

    Rinse 2 cups short-grain rice under cold water until the water runs nearly clear to remove excess starch.

    Combine rinsed rice and 2.4 cups water in a rice cooker or medium pot. Cook according to rice cooker instructions or bring to a boil, then reduce to low, cover, and simmer 15 minutes. Remove from heat and rest covered 10 minutes.

    If you have a dol-sot (stone bowl), preheat the empty dol-sot over medium-low heat for 3–4 minutes, brush the bottom with 1 tsp sesame oil to help form a crisp rice crust. Spoon rice into the hot dol-sot to form a layer on the bottom and sides; keep warm on very low heat while you prepare toppings.

Prepare Protein (choose the protein you want to use)

    Mix the protein marinade: in a bowl combine 2 tbsp soy sauce, 1 tbsp gochujang, 1 tsp sesame oil, 1 tsp mirin (optional), 1 tsp sugar or honey, 1 tsp minced garlic and 1/4 tsp black pepper. Reserve 1–2 tsp of the marinade for finishing if desired.

    Tofu: Press extra-firm tofu for 15–30 minutes to remove moisture. Toss tofu cubes with 1 tbsp of the marinade. Heat 1 tbsp vegetable oil in a nonstick skillet over medium-high heat and pan-fry tofu cubes 3–4 minutes per side until golden and slightly crisp. Set aside.

    Chicken: Toss the sliced chicken thigh in 2 tbsp marinade and let sit 10–15 minutes. Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Cook chicken 4–6 minutes, stirring, until cooked through and slightly caramelized. Remove from pan and keep warm.

    Spicy Pork: Toss pork slices with the marinade plus 1 tsp gochugaru and 1 tsp rice vinegar if using. Marinate 10 minutes. Sear in a hot skillet with 1 tbsp vegetable oil for 4–6 minutes until cooked and caramelized.

    Bulgogi (beef): Marinate thin beef slices with the marinade, adding 1 tsp sugar and 1 tsp grated pear or apple if available, for 10–20 minutes. Cook in a very hot skillet 2–4 minutes, stirring, until just caramelized. Remove and keep warm.

    Galbi (short rib): If using thin-cut galbi, marinate similarly to bulgogi for 20–30 minutes and grill or pan-sear in a hot skillet 2–4 minutes per side until cooked to desired doneness. Rest briefly.

    Shrimp: Toss shrimp with 1 tbsp marinade. Heat 1 tbsp oil in a skillet and cook shrimp 1–2 minutes per side until pink and opaque. Do not overcook.

Vegetable Toppings

    Carrot: Heat 1/2 tsp vegetable oil in a skillet over medium heat and sauté julienned carrot with a pinch of salt for 1–2 minutes until slightly softened. Remove and set aside.

    Zucchini: Sauté zucchini slices in 1/2 tsp vegetable oil with 1/4 tsp minced garlic and a pinch of salt for 1–2 minutes until tender but not mushy. Remove and set aside.

    Bean Sprouts: Blanch bean sprouts in boiling water for 30–45 seconds, drain, then toss with 1/2 tsp sesame oil, a pinch of salt, and 1/4 tsp minced garlic.

    Spinach: Blanch spinach in boiling water for 20–30 seconds, drain and squeeze out excess water. Season with 1/2 tsp sesame oil, a pinch of salt, and 1/4 tsp minced garlic. Set aside.

    Mushrooms: Sauté sliced shiitake or button mushrooms in 1/2 tsp vegetable oil with 1/4 tsp soy sauce and a pinch of black pepper for 2–3 minutes until browned. Set aside.

    Cucumber (optional): Keep fresh and thinly sliced; use as cool garnish.

Sauce & Assembly

    Sauce: If you don't have pre-made bibimbap sauce, make a quick mix: combine 3 tbsp gochujang, 1 tbsp sesame oil, 1 tsp rice vinegar, 1 tsp sugar (or honey), and 1 tbsp water to loosen. Taste and adjust heat or sweetness as desired.

    Heat the dol-sot (if using) until sizzling but not cracked. If using a regular bowl, warm bowls in the oven so everything stays hot.

    To assemble: Spoon a generous portion of rice into the dol-sot or bowl, arranging rice to form a base. Neatly place each vegetable (carrot, zucchini, spinach, bean sprouts, mushrooms, cucumber) in separate small piles around the bowl to create a colorful ring.

    Place your cooked protein choice in the center or to one side. Sprinkle toasted sesame seeds and sliced scallions over the top.

    Top with a fried egg (sunny-side up) or place a raw egg yolk in the center (traditional). If in a dol-sot, the hot stone will crisp the bottom rice — let it sit for 1–2 minutes.

    Serve the gochujang sauce on the side or drizzle 1–2 tbsp over the assembled bibimbap. Mix thoroughly at the table so egg, sauce, rice and toppings combine.

    Optional finishing: drizzle 1/2 tsp sesame oil over the mixed bibimbap and serve kimchi on the side.

Notes & Serving

  1. 24

    Adjust quantities and spice level depending on protein choice and personal preference. For a vegetarian bibimbap, omit protein or use tofu and increase mushroom and spinach.

    Leftover dol-sot rice crust can be loosened by adding 1–2 tbsp water and scraping with a spoon.
