    Boil noodles

    Bring a large pot of water to a rolling boil. Add 1 tablespoon kosher salt. Add the 12 oz noodles and cook just until al dente according to package instructions (usually 3–5 minutes for fresh thin noodles, 4–6 for dried). Stir occasionally to prevent sticking.

    Shock in ice bath

    While noodles cook, fill a large bowl with cold water and ice cubes. When noodles reach al dente, reserve 1/3 cup of boiling cooking water, then immediately drain noodles in a colander and plunge them into the ice bath. Swish to stop cooking and cool completely, about 1–2 minutes.

    Drain well: lift noodles from the ice bath and transfer to a colander or clean towel. Gently squeeze or pat to remove excess water so sauce won’t be diluted.

Spicy Sauce

    Combine base ingredients

    In a medium bowl, whisk together 2 tbsp gochujang, 2 tbsp soy sauce, 2 tbsp rice vinegar, 1 tsp toasted sesame oil, 1 tsp sesame oil, and 1 tsp sugar until smooth. This forms the spicy-tangy base.

    Add aromatics and adjust consistency

    Whisk in 1 tsp grated garlic, 1 tsp grated ginger, and 1 tsp gochugaru. Add up to 2 tbsp warm reserved cooking water a tablespoon at a time to loosen the sauce to a coating consistency (not soupy). Taste and adjust: add more vinegar if you want tang, more sugar or mirin if you want balance, or 1 tsp chili oil for extra heat.

    If you prefer a smoother, slightly thinner sauce, blend briefly with an immersion blender or pulse in a small food processor.

Assemble & Garnish

    Toss noodles with sauce

    Place the drained, chilled noodles into a large mixing bowl. Pour the spicy sauce over the noodles and toss vigorously with tongs or chopsticks until the noodles are evenly coated. If the mixture seems dry, add 1–2 tablespoons of the reserved cooking water gradually until the noodles are glossy and coated.

    Add vegetables

    Add the julienned cucumber (1 cup), julienned carrot (1 cup), and two-thirds of the sliced green onions (reserve some for garnish). Toss gently to combine so vegetables distribute through the noodles.

    Plate and garnish

    Divide the dressed noodles among 2–3 shallow bowls. Top each portion with halved soft-boiled eggs (optional), sprinkle toasted sesame seeds, crispy shallots or fried garlic, remaining green onions, and chopped cilantro or perilla if using. Drizzle a little chili oil if you want extra heat and finish with a small squeeze (1 tsp) of fresh lime juice if desired.

    Cook eggs

    Bring a small pot of water to a gentle boil. Lower in cold eggs and cook for 6–7 minutes for jammy yolks. Immediately transfer eggs to the ice bath used for the noodles and cool 5 minutes. Peel carefully and halve just before serving.

Serve & Store

    Serve immediately while the noodles are cold and sauce is vibrant. Leftover dressed noodles can be stored in an airtight container in the refrigerator for up to 24 hours; they may absorb sauce — toss with a splash of water or extra vinegar before serving to revive. Store any unused sauce separately up to 3 days refrigerated.
