Prepare beer bath and aromatics
In a medium saucepan or skillet large enough to hold all brats, combine beer, sliced onion, minced garlic, butter, brown sugar, smoked paprika, Dijon mustard, apple cider vinegar, kosher salt, and black pepper. Stir to dissolve the sugar and mustard. Bring mixture to a gentle simmer over medium heat.
Par-cook brats
Add the raw brats to the simmering beer mixture. Reduce heat to low and poach the brats gently for 10 minutes, turning once halfway through so they cook evenly and absorb the aromatics. Do not boil — keep at a gentle simmer to prevent casings from splitting.
Smoke and Finish
Prepare smoker or grill for indirect smoking
Preheat your smoker to 225°F (about 107°C) for a low, steady smoke. If using a charcoal grill, bank coals to one side for indirect heat; if using a gas grill, light one side and leave the other off. Place a drip pan with 1 cup of water under the grate where the brats will sit to keep humidity.
Add wood chips
Drain soaked wood chips and add them to the smoker box or directly to hot coals. Aim for a light, steady smoke rather than heavy billows. Maintain temperature around 225–250°F (107–121°C).
Smoke brats
Place the par-cooked brats on the grill/smoker grate over the drip pan (indirect heat). Smoke for 25–35 minutes, turning once halfway, until the internal temperature reaches 160°F (71°C) and there is a subtle smoky color and aroma. Baste once during the last 10 minutes with some of the reserved beer/onion liquid to add gloss and flavor.
Optional final sear
For a crisper exterior and char marks, move the brats to direct heat for 1–2 minutes per side at the end, watching carefully to avoid flare-ups and splitting casings.
To Serve
Warm buns: Split and toast buns lightly on the grill for 30–60 seconds, cut side down, until just golden.
Assemble: Place one smoked brat in each bun, spoon warmed sauerkraut alongside or on top, add mustard to taste, and garnish with pickled jalapeños if using.
Serve: Serve immediately with remaining beer/onion mixture strained into a small bowl as a dipping sauce or extra pour-over.
