Prepare wings
If not already separated, cut whole wings into drumettes and flats. Pat each piece thoroughly dry with paper towels to remove surface moisture — this is important for crisping.
Place the dried wings in a large bowl. Sprinkle with kosher salt, black pepper, and baking powder. Toss thoroughly so every piece is evenly coated. The baking powder helps dry the skin and promotes a crisp exterior during frying. Let rest 15 minutes at room temperature (or up to 1 hour in refrigerator) to allow coating to adhere and skin to dry slightly.
Seasoned Flour (for extra crisp)
While wings rest, combine the all-purpose flour, paprika, garlic powder, onion powder, and cayenne in a shallow dish. Mix well. Lightly dredge each wing in the seasoned flour just before frying, shaking off excess. (If you prefer no flour coating, skip this step — wings will still be crispy from the baking powder method.)
Frying
Pour about 1 cup (or more as needed) of neutral oil into a heavy skillet or Dutch oven to create a shallow pool about 1/2 to 1 inch deep. Heat oil over medium-high until it reaches 350°F (175°C) or until a small piece of bread sizzles and browns in about 45–60 seconds. If you don't have a thermometer, maintain a steady medium-high heat; the oil should be hot but not smoking.
Working in a single layer and in batches if necessary (do not overcrowd — 6 wings may fit in one small pan), carefully add wings to the hot oil skin-side down. Fry for about 6–8 minutes, turning occasionally, until the skin is golden brown and the internal temperature reaches 165°F (74°C). If wings are coated with flour, they may take 7–9 minutes. Adjust heat to keep oil between 325–350°F.
Using tongs, transfer fried wings to a wire rack set over a baking sheet to drain and stay crisp. For extra crispness, place the rack in a 200°F (95°C) oven for 5–8 minutes while finishing remaining wings so all are served hot and uniformly crisp.
