Prepare the Goat Cheese

Slice the goat cheese into rounds about 1/2 inch thick. Freeze the slices for about 30 minutes to help them hold their shape when frying.

Set Up Breading Station

In three separate bowls, set up your breading station: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Cheese

Remove the goat cheese from the freezer. First, coat each slice in flour, then dip it in the beaten eggs, and finally coat it in breadcrumbs. Make sure each slice is fully covered.

Fry the Cheese

In a large skillet, heat olive oil over medium heat. When hot, add the breaded goat cheese slices and fry for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Assemble the Salad

In a large bowl, combine mixed greens, diced cherry tomatoes, sliced red onion, toasted almonds, and dried cranberries.

Serve

Top the salad with the crispy fried goat cheese slices and drizzle with sweet onion vinaigrette to taste.
