    Select and rinse

    Choose 2 medium russet potatoes (about 500–600 g total). Peel if you prefer a uniform pale color; leaving skin on adds texture. Trim any dark spots and rinse under cold running water.

    Grate

    Using the large holes of a box grater or the large grating disc of a food processor, grate the potatoes into a large bowl. Work quickly to limit oxidation.

    Rinse and remove starch

    Add the grated potatoes to a bowl of cold water (about 500 ml) and stir to release starch. Drain and repeat rinsing 2 more times until the water runs much less cloudy.

    Squeeze dry

    Transfer the drained grated potatoes to a clean kitchen towel or several layers of paper towels. Twist and squeeze firmly until most moisture is expelled — aim for as dry as possible. You can press in handfuls for 1–2 minutes.

    Combine ingredients

    Place the dried grated potatoes in a large bowl. Add 2 tablespoons all-purpose flour, 1 whole egg, 3 tsp fine salt, 1 tsp black pepper, and 1 tsp onion powder. Mix with a fork until evenly combined. The mixture should hold together when pressed; if too wet, add up to 1 more tablespoon flour.

    Portion

    Divide the mixture into 6 equal portions for small patties or 3 portions for larger ones. Form each portion by pressing into compact patties about 3/4-inch thick. Handle gently — overworking will make them dense.

Cooking Fat

    Heat the pan

    Place a large nonstick or cast-iron skillet over medium-high heat. Add 4 tablespoons neutral oil (or clarified butter) and let it heat until shimmering but not smoking, about 2–3 minutes.

    Fry first side

    Carefully add the patties to the hot pan without crowding (work in batches if necessary). Press each patty gently once with a spatula to maximize contact. Cook undisturbed for 4–5 minutes, until the underside is deeply golden and crisp.

    Flip and finish

    Flip each patty and reduce heat to medium. Add a small knob (about 1 tablespoon) of butter to the pan if using for extra flavor. Cook the second side for 3–4 minutes, pressing lightly once. Both sides should be golden-brown and the centers cooked through.

    Drain

    Transfer finished hash browns to a wire rack set over a baking sheet or to a plate lined with paper towels to drain excess oil. Keep warm in a 90–100°C oven while finishing remaining batches.

Garnish (optional)

    Finish and serve

    Sprinkle the hot hash browns with a pinch of coarse finishing salt and chopped chives or parsley. Serve immediately while crispy.
