Method
Cake Preparation
Mix Dry Ingredients
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, salt, and cinnamon.
Combine Mixtures
Gradually add the wet mixture to the dry ingredients and mix until just combined. Stir in boiling water until smooth. Fold in chopped pecans.
Bake
Pour batter into prepared cake pans and bake at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted comes out clean.
Ganache Preparation
Heat Cream
In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
Combine with Chocolate
Remove from heat and add the chocolate chips, stirring until fully melted and smooth. Allow to cool slightly.
Orange Curd Preparation
Whisk Ingredients
In a medium saucepan, whisk together orange juice, eggs, and sugar until combined.
Cook Curd
Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in butter until melted.
Cinnamon Tuile Preparation
Assembly
Assemble the Cake
Once the cake layers are cooled, place one layer on a serving plate, spread ganache on top, then add the second layer and repeat. Top with orange curd and garnish with cinnamon tuiles.
