Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

Rub with Adobo Seasoning

Rub the adobo seasoning all over the filet mignon. Make sure to coat it well for maximum flavor.

Preheat the Grill

Preheat your wood fire grill to a high temperature, about 450°F (230°C).

Grill the Filet

Drizzle olive oil on the grill grates to prevent sticking. Place the filet mignon on the grill and cook for 4-5 minutes on each side for medium-rare, or adjust according to your preferred doneness.
