Wagyu Patties

Method

Wagyu Patties

    Portion and season

    Divide the 0.5 lb ground wagyu into three equal portions (about 2.6 oz / 75 g each). Gently form into loose rounds about 2.5–3 inches wide and 3/4 inch thick. Do not overwork the meat to preserve tenderness. Season both sides lightly with the fine sea salt (about 1 tsp per side total across patties) and freshly ground black pepper.

    Preheat pan

    Place a heavy skillet or cast-iron pan over medium-high heat. Add 1 tablespoon neutral oil and heat until shimmering but not smoking (about 1–2 minutes).

    Sear patties

    Add patties to the hot pan leaving space between them. Sear without moving for 2 minutes to develop a browned crust. Flip and sear the second side for 1½–2 minutes for medium-rare (adjust 30–60 seconds more for medium). During the last 30–45 seconds of cooking, place a slice of swiss cheese on each patty and cover the pan briefly to melt the cheese.

    Remove patties to a plate and tent loosely with foil to rest for 3–5 minutes while you finish other components.

Caramelized Onions

    Cook onions low and slow

    While patties rest (or start earlier if preferred), heat a medium skillet over medium-low heat. Add 1 tablespoon butter and 1 teaspoon olive oil. Add the thinly sliced onion and sprinkle with 1/4 tsp salt and 1/2 tsp granulated sugar. Stir to coat and spread into an even layer.

    Cook onions, stirring every 3–5 minutes, lowering heat if they begin to burn. Continue 20–30 minutes until deeply golden and soft. If pan dries, add a teaspoon of water to deglaze and prevent sticking.

    Finish

    When onions are richly browned, add 1 teaspoon balsamic vinegar to deglaze and stir to combine. Taste and adjust seasoning with a pinch more salt if needed. Keep warm until assembly.

Garlic Aioli

    Make aioli

    In a small bowl, whisk together 1/4 cup mayonnaise, grated garlic clove, 1 teaspoon lemon juice, 1/2 teaspoon Dijon mustard, 1/2 teaspoon olive oil, 1/8 teaspoon fine sea salt and 1/8 teaspoon black pepper until smooth. Taste and adjust acidity or salt as desired. Cover and chill until ready to use (at least 10 minutes to let flavors marry).

Buns & Toasting

    Prepare buns

    Split the 3 brioche slider buns. Butter the cut sides lightly with the softened butter.

    Toast the buttered sides in a dry skillet over medium heat, or under a broiler, until golden and just crisp (about 1–2 minutes). Remove and keep warm.

Assembly & Garnish

    Spread about 1 teaspoon of garlic aioli on the bottom half of each toasted brioche bun.

    Place a small handful (about 1–2 tablespoons) of baby arugula or a leaf of bibb lettuce on the aioli if using.

    Set the rested wagyu patty with melted swiss cheese on top of the greens.

  4. 14

    Top each patty with 1–2 tablespoons of caramelized onions.

    Add a pickle slice on top (optional), then spread a light smear of aioli on the top bun and close each slider.

    Serve three wagyu sliders warm, on a platter. Provide toothpicks if desired.
