    Preheat and prepare

    Preheat a Belgian waffle iron according to the manufacturer's instructions to medium-high heat. Lightly brush or spray the plates with vegetable oil to prevent sticking.

    Combine dry ingredients

    In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly blended.

    Whisk wet ingredients

    In a separate bowl, beat the eggs lightly, then whisk in the milk, melted cooled butter, and vanilla extract until combined.

    Make batter

    Pour the wet ingredients into the dry ingredients and stir gently until just combined; small lumps are okay. Do not overmix. Fold in the pearl sugar gently so it is distributed but not crushed.

    Cook waffles

    Working with a hot waffle iron, pour enough batter to cover the waffle grid (about 3/4 cup for a standard Belgian iron — adjust to your iron's capacity). Close the lid and cook until the waffle is golden brown and crisp, about 3–5 minutes depending on your iron. Repeat to make a total of two waffles. Remove waffles and keep warm on a wire rack in a low oven (about 200°F / 95°C) while you finish.

Whipped Cream & Finishing

    Make whipped cream

    Chill a medium bowl and beaters for 5–10 minutes in the fridge if possible. Pour the heavy whipping cream into the chilled bowl, add the powdered sugar and vanilla, and whip with an electric mixer on medium-high speed until soft to medium peaks form (about 2–3 minutes). Do not overwhip; you want a light, pillowy texture.

    Plate and garnish

    Place the two pearl-sugar Belgian waffles stacked or side-by-side on a plate. Spoon or pipe a generous dollop of whipped cream on top of the waffles. Lightly dust the whipped cream and waffles with the reserved powdered sugar (use a fine-mesh sieve for an even dusting). Serve immediately.
