Prepare Batter

    Mix dry ingredients

    In a small bowl, whisk together 0.25 cups all-purpose flour, 0.5 tsp granulated sugar, 0.5 tsp baking powder, and 0.125 tsp fine salt until evenly combined.

    Combine wet ingredients

    In a separate bowl, whisk 0.25 cups milk with 1 large egg yolk, 0.5 tbs melted unsalted butter, and 0.125 tsp vanilla extract until smooth.

    Make the batter

    Pour the wet mixture into the dry ingredients and stir gently with a spatula or spoon until just combined. Small lumps are fine; do not overmix.

Whip Egg White & Fold

    Whip egg white

    In a clean, dry small bowl, using a fork or small whisk, beat 1 large egg white until frothy and it holds soft peaks — about 1.5 to 2 minutes by hand (or 30–45 seconds with a small electric mixer). The white should be glossy and slightly billowy.

    Fold gently

    Fold about one-third of the whipped egg white into the pancake batter to loosen it, then gently fold in the remaining egg white with a rubber spatula using large, light strokes. Stop when streaks disappear; keep as much air as possible for a fluffy pancake.

Cook Pancake

    Preheat pan

    Place a nonstick skillet or small cast-iron pan over medium-low heat. When warm (after ~1–2 minutes), add 0.5 tsp butter or oil and swirl to coat the cooking surface. Wipe excess with a paper towel if needed so the fat is thin and even.

    Pour the batter into the center of the pan to form one pancake about 4–5 inches (use all batter). Cook undisturbed for 2 to 3 minutes until small bubbles appear on the surface and the edges look set and slightly dry. If the pan is browning too fast, lower the heat.

    Carefully flip the pancake with a spatula and cook the second side for 30–60 seconds until golden and cooked through. The pancake should be puffed and lightly golden.

    Transfer the cooked pancake to a plate and let rest for 30–60 seconds to settle. This avoids steam making it soggy.
