Prepare bacon
In a large skillet over medium heat, add bacon strips in a single layer. Cook 4–6 minutes per side until crisp to your liking. Transfer to a paper towel-lined plate to drain and keep warm.

Cook sausage
If using links, heat 1/2 tbs butter in the same skillet over medium heat. Add sausage links and cook, turning occasionally, until browned and cooked through (internal temp 160°F/71°C for pork, 165°F/74°C for turkey), about 8–10 minutes. Remove and slice in half lengthwise or leave whole for the sandwich.

Heat ham
Briefly warm the deli ham in the skillet for 30–60 seconds per side to develop a little color and render some flavor. Remove and keep warm.
Bread & Assembly

Toast bread
Butter one side of each bread slice lightly. Heat a clean skillet or griddle over medium heat and place bread butter-side-down to toast until golden, about 1–2 minutes. Flip and toast the other side just until warmed, 30–45 seconds. Remove and set buttered/toasted side down when assembling.

Assemble sandwich
Spread mayonnaise on one slice and mustard on the other. On the bottom slice, layer cheese, warm ham, sliced sausage (or whole links), and bacon. Add optional lettuce and pickles. Top with remaining bread slice. If you prefer a melted-cheese finish, return the assembled sandwich to the skillet, cover, and cook 1–2 minutes per side over low heat until cheese melts and bread is golden.

Cook onions
Heat 1 tbs oil + 1 tbs butter in a large skillet over medium-high heat. Add diced onion and cook 3–4 minutes until starting to soften and turn translucent.

Fry potatoes
Add remaining 1 tbs oil to the skillet, then add dried potatoes in a single layer as much as possible. Sprinkle paprika, garlic powder, salt, and pepper over potatoes. Cook without stirring 5–6 minutes to develop a crust, then stir/flip and continue cooking another 8–10 minutes, stirring occasionally, until potatoes are golden and tender when pierced with a fork.

Finish home fries
Taste and adjust seasoning. Stir in chopped parsley if using. Keep warm until ready to serve alongside the sandwich.

Slice the sandwich in half if desired and plate with a generous portion of home fries. Serve immediately while hot.
