Method
Cookie Skillet
- 1
Preheat and prepare skillet
Preheat oven to 350°F (175°C). Lightly grease a 9-inch oven-safe skillet (cast iron preferred) with 1 teaspoon butter or neutral oil, then line the bottom with a small round of parchment if desired for easier removal. Set skillet aside to warm slightly while you prepare the dough.
- 2
Cream butter and sugars
In a mixing bowl, cream the 1/2 cup softened unsalted butter with 1/4 cup granulated sugar and 1/2 cup packed light brown sugar until light and fluffy, about 2–3 minutes with a hand mixer or 4–5 minutes by hand.
- 3
- 4
Combine dry ingredients
In a separate bowl whisk together 1 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon fine salt until evenly distributed.
- 5
Mix dough
Gradually add the dry ingredients to the butter mixture and fold until just combined; do not overmix. Fold in 3/4 cup semisweet chocolate chips and the optional 1/4 cup chopped nuts, distributing them evenly through the dough.
- 6
Shape in skillet
Transfer the dough to the prepared 9-inch skillet and use a spatula or lightly floured fingers to press it into an even layer, leaving the center slightly lower than the edges so the cookie bakes evenly.
- 7
Bake
Bake in the preheated 350°F (175°C) oven for 18–22 minutes, until the edges are golden brown and the center is set but still soft — an inserted toothpick should come out with a few moist crumbs. For a softer skillet cookie, err on the lower end of time; for a more well-done edge, bake a few minutes longer.
- 8
Rest briefly
Remove the skillet from the oven and let the cookie rest for 5–7 minutes. This lets the cookie set so it can be scooped without falling apart, while still warm for the ice cream topping.

Drizzle chocolate and finish
Drizzle 2 tablespoons chocolate sauce over the ice cream and cookie. Sprinkle a small pinch (about 1/4 teaspoon) of flaky sea salt over the top to enhance flavor contrast. Serve immediately with spoons.
