Fried Chicken

Pound and Marinate
Trim chicken thighs to even thickness (about 1/2 inch). Lightly pound if needed. In a bowl combine buttermilk and 2 tbsp hot sauce. Add chicken, cover, and refrigerate at least 1 hour or up to 6 hours to tenderize and flavor.

Prepare Dredge
In a shallow bowl or rimmed plate whisk together flour, cornstarch, smoked paprika, cayenne, garlic powder, onion powder, dried oregano, 1.5 tsp salt, and 0.75 tsp black pepper until homogenous.

Dredge Chicken
Remove one piece of chicken from the buttermilk, letting excess drip off. Press evenly into the flour mixture to coat thoroughly, shake off excess, then for extra crunch dip briefly back into remaining buttermilk and re-coat in the flour mixture. Place on a wire rack and repeat with remaining pieces.

Heat Oil and Fry
Pour vegetable oil into a heavy skillet or Dutch oven to reach ~1/2 inch depth. Heat over medium-high until oil registers 350°F (175°C) or a small pinch of flour sizzles when dropped in. Fry chicken, presentation side down first, 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Work in batches to avoid crowding. Transfer to a wire rack set over a sheet pan to drain and keep crisp.
Honey-Hot Sauce

Combine 1/4 cup hot sauce, 2 tbsp honey, 1 tbsp butter, and 1 tsp apple cider vinegar in a small saucepan or microwave-safe bowl. Warm gently over low heat or microwave in 15-second bursts, stirring, until butter melts and sauce is glossy and combined. Taste and add a pinch of cayenne if you want more heat. Keep warm.

When chicken is freshly fried and still hot, place each piece in a shallow bowl or brush both sides generously with the warm honey-hot sauce so the coating is well glazed. Let excess drip back to the bowl or rack.
Creamy Coleslaw

In a large bowl combine shredded green cabbage, shredded red cabbage, and grated carrot.

In a separate small bowl whisk together mayonnaise, 1 tsp apple cider vinegar, Dijon mustard, 1/2 tsp sugar, 1/2 tsp salt, and 1/4 tsp black pepper until smooth. Taste and adjust seasoning—add a little more vinegar for brightness or a pinch more sugar if too tart.

Pour dressing over the cabbage mixture and toss until evenly coated. Refrigerate at least 15 minutes for flavors to meld. Keep chilled until assembly.

To assemble each sandwich: spread a small spoonful of coleslaw on the bottom bun (about 1/4–1/3 cup), place a glazed hot chicken thigh on top, add 2 pickle slices, and finish with another small scoop of coleslaw if desired. Cap with the top bun.
