Prepare the meat
Place the 1 lb ground beef in a large mixing bowl. Sprinkle in 2 tbs fine dry breadcrumbs, 2 tsp milk, 1 tsp salt, and 1 tsp black pepper.

Mix gently
Using your hands or a fork, gently combine the ingredients until just mixed. Avoid overworking—stop when seasonings are evenly distributed and the meat holds together.

Form patties
Divide the mixture into 4 equal portions (about 4 oz each). Shape each portion into a round patty about 3.5–4 inches in diameter and roughly 1/2-inch thick. Press a shallow dimple in the center of each patty with your thumb to help prevent puffing while cooking.

Heat pan
Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tbs vegetable oil and swirl to coat the bottom.

Cook patties
Place patties in the hot skillet, leaving space between them. Cook undisturbed for 3–4 minutes until a browned crust forms on the underside. Flip and continue cooking 2–4 minutes more for a medium doneness (adjust time for well-done or rarer as preferred).

Add cheese (optional)
If using cheese, place a slice on each patty during the last 30–60 seconds of cooking. Cover the pan briefly or reduce heat to low so the cheese melts.

Transfer patties to a plate and let rest for 2–3 minutes while you prepare buns and toppings.
