If using whole squid, rinse under cold water. Remove head, innards, quill, and skin if desired. Separate the tube (body) and tentacles. Slice the cleaned tube into 1/2-inch rings. Pat rings and tentacles very dry with paper towels—dryness is critical for crisp frying.

Season the cleaned, dried squid lightly with 1 tsp salt and 1 tsp black pepper. Squeeze half the lemon over the squid and toss gently. Let rest 5 minutes while you prepare breading and oil.

Set up a breading station: one shallow bowl with the dry flour mixture, one bowl with the wet batter (if using), and a wire rack or sheet pan for the breaded pieces. Dry flour mixture: In a wide shallow bowl combine 1 cup all-purpose flour, 1/4 cup cornmeal (or semolina), 1/4 cup fine breadcrumbs or panko (if using), 1/2 tsp garlic powder, 1/2 tsp paprika, 1/8 tsp cayenne, and 1/4 tsp freshly ground black pepper. Whisk to combine.

Two options to bread: (A) Dry dredge — toss squid pieces directly in the dry flour mixture, pressing lightly so the flour adheres. Shake off excess. (B) Wet batter then flour — whisk 1 egg with 1/2 cup cold sparkling water and 1/4 tsp salt until just combined; dip squid into the wet batter, let excess drip, then dredge in the dry flour mixture for a slightly thicker crunchy crust. Arrange breaded pieces in a single layer on the rack/sheet pan while heating oil.

Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep skillet, leaving at least 2 inches of headspace. Heat oil over medium-high heat until it reaches 350–365°F (175–185°C). If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and rise immediately.

Fry in batches (do not overcrowd) — add a single layer of breaded calamari pieces and fry 1 to 1 1/2 minutes, turning once, until golden brown and crisp. Tentacles may take a few seconds longer. Keep the oil temperature between 340–360°F by adjusting heat between batches.

Use a slotted spoon or spider to remove the fried calamari and transfer to a paper towel–lined baking sheet or rack to drain. While hot, sprinkle lightly with a pinch of salt.

Continue frying remaining batches. If you want to keep cooked batches warm, place them on a wire rack set over a baking sheet in a 200°F (95°C) oven for up to 15–20 minutes (do not overstay or they’ll lose crispness).
