    Prepare and cook bacon

    Preheat oven to 400°F (200°C). Arrange applewood smoked bacon slices in a single layer on a rimmed baking sheet lined with foil or parchment. Bake for 12–18 minutes, turning the pan halfway through, until bacon is crisp to your liking. For stove-top: cook in a skillet over medium heat 8–12 minutes, turning occasionally. Transfer bacon to a paper-towel-lined plate to drain and keep warm.

    Prepare tomato

    While bacon cooks, slice the ripe tomato into 1/4-inch (6 mm) thick slices. Lay slices on a plate, very lightly season both sides with the 1/4 tsp salt and 1/8 tsp freshly ground black pepper, and drizzle or brush with 1/2 tsp olive oil if desired. This brings out flavor and prevents sogginess.

    Wash and prepare lettuce

    Rinse the bibb lettuce leaves under cold water, pat dry thoroughly with paper towels or a salad spinner. Select 2 nice-sized leaves per sandwich, tearing to fit if needed. Keep chilled until assembly.

    Toast the bread

    Choose your bread and lightly butter each slice with the optional 1 tsp unsalted butter (if using). Toast slices in a toaster or skillet until golden and crisp, about 2–3 minutes per side in a skillet over medium heat, or according to your toaster. Toasting prevents the bread from becoming soggy from tomato and mayonnaise.

    Assemble the sandwich

    Spread about 1.5 tablespoons of mayonnaise evenly on one side of each toasted bread slice. On the bottom slice (mayo side up) arrange the bibb lettuce leaves to create a barrier between bread and tomato. Layer 2–3 tomato slices over the lettuce, then place the 6 slices of crisp applewood bacon on top of the tomato (you can overlap). Finish with the top slice of bread, mayo side down. If desired, gently press the sandwich and cut in half diagonally.

    Serve

    Transfer the sandwich to a plate. Serve immediately while bacon is warm and bread is crisp. Offer extra mayonnaise, ketchup, or pickles on the side if desired. Estimated serving: 1 sandwich.
