Prepare Jalapeños and Filling

Prepare peppers
Rinse the jalapeños and pat dry. Wearing gloves (recommended), slice each jalapeño lengthwise in half. Use a small spoon to scrape out seeds and membranes for milder heat; leave some membranes/seeds if you want spicier poppers. Set pepper halves aside on a tray, cut side up.

Make filling
In a medium bowl, soften the cream cheese by stirring with a spatula until smooth. Add shredded cheddar, crumbled cooked bacon (break into small pieces), sliced green onion, garlic powder, salt, and black pepper. Mix until evenly combined. Taste and adjust seasoning if needed.

Fill peppers
Using a spoon or small piping bag, fill each jalapeño half with the cream cheese mixture, mounding slightly but keeping the top relatively even so filling won't fall out during breading.

Set up breading station
Place the flour in a shallow bowl. In a second bowl, whisk the eggs with the milk until smooth. In a third bowl, combine panko breadcrumbs and cayenne pepper. If you want extra crunch, pulse the panko briefly in a food processor for finer crumbs—this is optional.

Coat peppers
Working in batches, gently dredge each filled jalapeño half in flour (shake off excess), dip into the egg mixture letting excess drip back, then press into the panko mixture to coat thoroughly. Place breaded poppers on a tray and repeat. For a thicker crust, double-dip: return to egg, then panko again.

Fry method (crispier)
Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering (or preheat a deep-fryer to 350°F / 175°C). Add poppers in a single layer without crowding, seam-side up, and fry 2–3 minutes per side until golden brown and cheese is bubbling (adjust time if using deeper oil). Use a slotted spoon to transfer to a paper towel–lined plate to drain. Repeat with remaining poppers. Total cook time about 8–12 minutes.

Bake method (lighter)
Preheat oven to 425°F (220°C). Place breaded poppers on a parchment-lined baking sheet. Lightly spray tops with cooking spray. Bake 12–15 minutes until golden and cheese is hot and poppers are crisp. For extra browning, switch to broil for 1–2 minutes at the end—watch closely.

Arrange poppers on a serving platter. Garnish with chopped cilantro or parsley if using. Serve hot with ranch dressing or chipotle mayo for dipping. Leftovers can be refrigerated in an airtight container for up to 2 days and reheated in a 375°F (190°C) oven until warmed through and crisp, about 8–10 minutes.
