Prepare glass and fruit

Fill a highball or large wine glass with about 1 cup of ice cubes to chill the glass. Roll the grapefruit on the countertop firmly to release juices, then cut a wedge and set aside the wedge for garnish.

Combine juices

In a small mixing glass or measuring cup, combine 1 oz fresh grapefruit juice and 0.25 oz fresh lemon juice. If you prefer a slightly sweeter drink, add 0.25 oz simple syrup and stir to combine.

Build the spritz

Pour the grapefruit-lemon mixture over the ice in the prepared glass. Gently add 6 fl oz San Pellegrino Aranciata to the glass. Pour 2 fl oz chilled club soda slowly over the back of a spoon (or down the side of the glass) to preserve bubbles and create a light layered fizz.

Garnish and serve

Gently stir once with a bar spoon (1–2 turns) to incorporate without flattening the carbonation. Brush the rim of the glass with the reserved grapefruit wedge then drop the wedge into the drink or place the grapefruit twist on the rim. Add a mint sprig if using. Serve immediately with a straw or stirring stick.
