Mocktail Base

Combine liquids

In a cocktail shaker or a large glass, pour 60 ml elderflower cordial and 30 ml fresh lime juice. If you prefer a sweeter drink, add 15 ml simple syrup. This yields a balanced sweet-tart base.

Add ice

Add enough crushed ice to the shaker or mixing glass to chill the liquid — about 1/2 cup. Give a quick stir for 10 seconds to cool and slightly dilute the base.

Muddle mint and lime

Place 8 of the mint leaves and both lime wedges into the shaker or glass. Gently muddle 6–8 times to release mint oils and squeeze the lime wedges. Avoid tearing the mint into small bits; aim to bruise leaves to release aroma.

Strain (optional)

If you prefer a clear drink without leaf bits, double-strain the mixture into the serving glass over crushed ice. Otherwise, pour with the muddled solids for more texture and visual appeal.

Assemble and top with soda

Fill a highball or Collins glass with about 1 cup crushed ice. Pour the muddled elderflower-lime mixture over the ice. Top gently with 180 ml chilled soda water, pouring slowly to retain bubbles.

Garnish and serve

Give the drink a gentle stir (2–3 turns) to combine without flattening the soda. Slap the reserved mint sprig between your hands to release aroma and place it on top as a garnish. Serve immediately with a straw.
