Aranciata (Sparkling Blood Orange Soda)

Juice and sweeten

If not using bottled blood orange juice, juice enough blood oranges to yield 1 cup of fresh juice (about 3–4 medium blood oranges). Strain the juice through a fine-mesh sieve into a measuring cup to remove pulp and seeds. Stir in 2 tablespoons of simple syrup until evenly combined. Taste and add up to 1 more tablespoon simple syrup if you prefer sweeter.

Assemble the drink

Fill a tall glass with 1 cup of ice cubes. Pour the sweetened blood orange juice over the ice. Slowly top with 1 cup of chilled San Pellegrino sparkling water (or orange-flavored San Pellegrino) to preserve carbonation. Stir gently once with a bar spoon to combine without flattening the fizz.

Garnish and serve

Garnish with a blood orange slice on the rim and a mint sprig if using. Serve immediately with a straw or stirrer.

Limonata (Sparkling Lemonade)

Juice and sweeten

Juice fresh lemons until you have 3/4 cup of lemon juice (about 4–5 medium lemons). Strain to remove seeds and excess pulp. Stir in 3 tablespoons of simple syrup until fully incorporated. Add the lemon zest (1/4 tsp) for extra aroma and stir. Taste and adjust sweetness with up to 1 more tablespoon simple syrup if desired.

Assemble the drink

Fill a tall glass with 1 cup of ice cubes. Pour the sweetened lemon juice over the ice. Slowly top with 1 cup of chilled San Pellegrino sparkling water (or limonata-flavored San Pellegrino) to maintain carbonation. Stir gently once to combine.

Garnish with a lemon wheel on the rim. Serve immediately so the drink remains fizzy.
