Prepare glass
Chill a coupe or large wine glass by filling it with ice and cold water while you prepare the cocktail. Alternatively, place it in the freezer for a few minutes.
Combine ingredients
In a cocktail shaker, add 2 oz gin, 0.75 oz Aperol, 1 oz peach purée (or nectar), 0.5 oz fresh lemon juice and 0.25 oz simple syrup if you prefer a slightly sweeter drink. Add a generous scoop of ice to the shaker (about 1 cup).
Shake
Shake vigorously for 12–15 seconds until the shaker is chilled and you feel condensation on the outside. This both chills and slightly aerates the peach purée.
Strain and add rosé
Discard the ice/water from the chilled glass. Double-strain the shaken mixture into the chilled glass using a Hawthorne strainer and a fine mesh strainer to catch peach solids. After straining, gently pour 2 oz chilled dry rosé down the side of the glass so it layers and mingles with the shaken base.
Optional lengthen
If you prefer a lighter, spritz-style drink, top with about 1 oz soda water and stir gently once to combine.
Garnish and serve
Garnish with a fresh peach slice or a lemon twist on the rim. Serve immediately.
