Cook the Brown Rice

Rinse the brown rice under cold water. In a medium pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until tender. Remove from heat and let it sit covered for 10 minutes, then fluff with a fork.

Marinate the Tofu

Press the tofu to remove excess water. Cut into cubes and marinate in a mixture of soy sauce, garlic, and ginger for at least 30 minutes.

Prepare the Vegetables

Slice the red bell pepper, carrot, and beet into thin strips. If using raw beets, you may want to roast them first for better flavor.

Cook the Tofu

In a non-stick skillet over medium heat, sauté the marinated tofu until golden brown on all sides, about 8-10 minutes.

Assemble the Dragon Bowl

In a large bowl, layer the cooked brown rice, sautéed tofu, red peppers, carrot, beet, pickled red onion, avocado slices, and fresh spinach. Drizzle with tahini dressing and sprinkle with black sesame seeds.
