Cooking Pasta

Boil the Pasta

In a large pot, bring salted water to a boil. Add 250 grams of pasta and cook according to package instructions until al dente. Drain and set aside.

Chop the Vegetables

While the pasta is cooking, chop 1 medium zucchini and 1 medium bell pepper into bite-sized pieces. Halve 200 grams of cherry tomatoes and mince 3 cloves of garlic.

Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add Remaining Vegetables

Add the chopped zucchini and bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally until they begin to soften.

Add Spinach and Tomatoes

Add the halved cherry tomatoes and 100 grams of spinach to the skillet. Cook for an additional 2-3 minutes until the spinach wilts.

Mix Pasta with Vegetables

Once the vegetables are cooked, add the drained pasta to the skillet. Stir to combine and season with 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of Italian seasoning.

Serve

Serve hot, garnished with 50 grams of grated Parmesan cheese on top.
