Brewing Instructions
1. Mashing
In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C). Add the pale malt, crystal malt, and roasted barley. Stir well and maintain the temperature at around 150-155°F (65-68°C) for 60 minutes.
2. Lautering
After mashing, sparge the grains with hot water to collect the wort. Bring the wort to a boil.
3. Boiling
Once boiling, add 1 oz of Cascade hops and boil for 60 minutes. Add 0.5 oz of Centennial hops during the last 10 minutes of the boil.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and let it ferment at room temperature for about 1-2 weeks.
6. Bottling
After fermentation, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap each bottle. Let it carbonate for about 2 weeks.
