Prepare the Onions
Slice the onion into thin rings. Heat 1 tablespoon of butter in a skillet over medium heat, add the onions, and sauté until they are caramelized, about 10-15 minutes. Set aside.

Form the Patties
In a mixing bowl, combine the ground beef with salt and black pepper. Divide the mixture into two equal portions and form them into burger patties.

Cook the Patties
In the same skillet used for the onions, add the remaining tablespoon of butter and increase the heat to medium-high. Cook the burger patties for about 3-4 minutes on each side, or until they reach your desired doneness. Place a slice of cheese on each patty during the last minute of cooking to allow it to melt.

Assemble the Patty Melt
Spread 1 tablespoon of 1000 Island dressing on one side of each slice of rye bread. On two slices, place the cooked patties with melted cheese, followed by the caramelized onions. Top with the remaining slices of rye bread, dressing side down.

Serve
Remove the sandwiches from the skillet, cut in half, and serve hot with additional 1000 Island dressing on the side, if desired.
