1. Prepare the Patties
In a mixing bowl, combine ground beef with salt and black pepper. Form into 4 equal-sized patties.
2. Cook the Burgers
Heat olive oil in a skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.
3. Add Pastrami and Cheese
During the last minute of cooking, place 1 slice of pastrami and 1 slice of Swiss cheese on top of each patty. Cover to melt the cheese.
4. Toast the Buns
While the cheese melts, lightly toast the burger buns on the grill or in a toaster.
5. Assemble the Burgers
Spread Dijon mustard on the bottom half of each bun, add the burger patty with melted cheese and pastrami, and top with pickle slices. Add the top bun.
6. Serve
Serve the pastrami burgers hot with your favorite sides.
