Prepare the Sauce
In a small bowl, mix Korean pepper paste, soy sauce, and brown sugar until well combined. Set aside.
Make the Patties
In a bowl, combine ground beef with half of the prepared sauce. Form into 4 equal patties.
Grill the Patties
Preheat a grill or grill pan over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.
Add Cheese
In the last minute of cooking, place a slice of PepperJack cheese on each patty and cover until melted.
Assemble the Burgers
Spread the remaining sauce on the bottom half of each burger bun. Add a lettuce leaf, the grilled patty with melted cheese, caramelized onions, and a generous scoop of kimchi. Sprinkle with sesame seeds, then place the top bun on.
Serve
Serve the Korean burgers immediately and enjoy!
