    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to make fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Mince the Garlic

    While the fries are soaking, mince the garlic cloves and set aside.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Remove the fries from the water, pat them dry, and carefully add them to the hot oil in batches. Fry until golden brown, about 5-7 minutes per batch.

    Add Garlic and Season

    In the last couple of minutes of frying, add the minced garlic to the oil. Fry until fragrant, then remove the fries and garlic from the oil.

    Drain and Serve

    Drain the fries on paper towels, season with salt, and sprinkle with chopped parsley before serving.
