Set out mustard, ketchup, relish, diced onion and any optional add-ins (sauerkraut, jalapeños, cheese). If using frozen hot dogs, thaw in the refrigerator. Split buns along the top without tearing them; set aside.

Option A — Boil (juicy, classic)
In a medium pot, combine water, beer (if using), bay leaf and salt and bring to a gentle simmer over medium heat. Add the hot dogs and simmer for 5–7 minutes until heated through. Avoid a rolling boil to prevent split skins. Use tongs to transfer hot dogs to a plate and discard bay leaf.

Heat a large skillet over medium-high heat. Add hot dogs in a single layer and cook, turning occasionally, for 6–8 minutes until the skins blister and brown. If they begin to stick, add 1–2 teaspoons neutral oil to the pan.

Place buns in a steamer basket over simmering water for 1–2 minutes until warm and soft. To steam hot dogs, add them to the simmering water for 3–4 minutes.
