Assembly and preheat

    Preheat your oven to 200°F (95°C) for gentle holding or 250°F (120°C) for more active warming. Place a rimmed baking sheet on the middle rack of the oven during preheat to warm the metal (this speeds recovery when you put food in). If you prefer to protect the pan, line the baking sheet with a sheet of aluminum foil or parchment; if using parchment, be cautious about direct contact with heating elements.

    If the baking sheet tends to stick or you want easier cleanup, lightly spray the sheet or foil with cooking spray or wipe with a thin coat of neutral oil.

Rack placement

    Position the rack

    Place the metal baking rack or wire cooling rack centered on the warmed baking sheet. The rack should sit flat and leave an even gap from the pan edges so hot air can circulate underneath the food. If you have a slightly smaller wire cooling rack, place it inside the baking sheet so juices or oil drip onto the sheet, not the oven floor.

    If your rack is nonstick-coated, verify it is oven-safe at your chosen temperature. If the rack is elevated with legs, ensure they are stable and the rack won't wobble when loaded.

Holding food

    Transfer food

    Arrange the cooked food in a single layer on the rack, leaving small spaces between pieces to allow hot air circulation. For oily items (fried foods), place a sheet of paper towel on the rack or on part of the baking sheet to absorb drips; replace as needed to prevent sogginess.

    Maintain temperature

    Return the baking sheet with rack and food to the preheated oven. Keep the oven door closed as much as possible; each time you open it, the temperature drops and the warming performance reduces. Use the lower temperature (200°F / 95°C) to keep delicate items from drying; use 250°F (120°C) when you need to hold items that need to remain crisp (but check every 10–15 minutes).

    If you are holding several batches, rotate the items on the rack and replace with freshly heated pans as needed to maintain a consistent warmth.

Finishing and serving

    Check doneness and moisture

    Before serving, quickly check food for desired temperature and texture. For items that should be crisp, if they have softened, briefly increase oven temperature to 300–350°F (150–175°C) for 3–5 minutes and monitor closely to re-crisp without drying out.

    Use tongs or a spatula to transfer food from the rack to plates. Allow items held on paper towels to drain briefly if they collected excess oil.
