    Peel and cut

    Peel the russet potatoes (optional to leave skin on). Cut potatoes into even sticks about 1/4 to 3/8 inch (6–9 mm) thick. Try to keep pieces uniform so they cook evenly.

    Rinse and soak

    Place the cut potato sticks in a large bowl and cover with cold water. Rinse briefly, then drain and refill with fresh cold water and the ice cubes. Soak for at least 30 minutes (or up to 4 hours) to remove surface starch for crisper fries.

    Dry thoroughly

    Drain the soaked potatoes in a colander and spread them on clean kitchen towels or paper towels. Pat completely dry — excess moisture will cause oil to splatter and make fries less crisp.

Frying Oil

    Heat oil

    Pour the oil into a heavy-bottomed pot or deep fryer, using enough to give the fries about 2–3 inches of submersion (approximately 1.5 cups for a small pot). Heat oil to 325°F (160°C) for the first blanch. Use a thermometer to monitor temperature precisely.

    First fry (blanch)

    Working in a single layer and not overcrowding, add a portion of the potato sticks to the oil and fry for 3–4 minutes until soft and pale (not browned). Remove with a slotted spoon or spider to a paper towel–lined sheet tray. Let cool for 10–15 minutes. Repeat with remaining potatoes.

    Increase heat

    Raise the oil temperature to 375°F (190°C) for the final crisping fry.

    Second fry (crisp)

    Return the blanched potatoes to the hot oil in batches and fry until golden brown and crisp, about 2–3 minutes per batch. Move them while frying so they brown evenly. Remove to a paper towel–lined tray to drain excess oil.

Seasoning & Finish

    Season immediately

    While still hot, sprinkle the fries with kosher salt and black pepper to taste so the seasoning adheres. Toss gently to distribute evenly.

    Optional garnish

    If using, toss with finely chopped fresh parsley for color and freshness. Serve immediately for best texture.
