    Prep vegetables

    Remove outer leaves from cabbages. Cut away core and halve each cabbage. Thinly slice or shred green cabbage until you have about 6 cups packed. Thinly slice or shred red cabbage to yield about 2 cups. Peel and grate carrots to yield 1 cup. Peel and finely mince red onion to equal 1/4 cup. Roughly chop fresh parsley.

    Combine

    Place shredded green cabbage, red cabbage, grated carrot, minced red onion, and chopped parsley into a large mixing bowl. Toss gently to combine so the vegetables are evenly distributed.

Dressing

    Make dressing

    In a medium bowl, whisk together mayonnaise, plain yogurt (or sour cream), apple cider vinegar, Dijon mustard, granulated sugar, celery seed, salt, and black pepper until smooth and the sugar is dissolved.

    Taste and adjust

    Taste the dressing and adjust seasoning as needed: add a little more sugar if you prefer sweeter slaw, more vinegar for tang, or more salt and pepper to taste.

    Dress the slaw

    Pour the dressing over the prepared vegetables. Using tongs or two large spoons, toss thoroughly so all cabbage and carrots are evenly coated. Start with about three-quarters of the dressing; reserve the remainder to avoid overdressing. Add more if needed to reach the desired creaminess.

    Chill and settle

    Cover the bowl and refrigerate for at least 30 minutes, preferably 1–2 hours, to allow flavors to meld and the cabbage to slightly soften. If the slaw releases excess liquid, drain a little before serving or stir in the reserved dressing if thinness increases.

    Final toss and serve

    Give the slaw a final toss before serving, adjust seasoning with a pinch of salt or pepper if necessary, and serve chilled as a side dish or sandwich topping.
