Apple Juice
For Straining / Clarifying (optional)
Method
Apple Juice
- 1
Prepare apples
Wash apples thoroughly under cold running water to remove wax and debris. Core the apples and cut into quarters. Peeling is optional — leaving skins on gives more flavor, nutrients, and color; peel only if you want a milder, clearer juice.
- 2
Chop and weigh
Roughly chop the apple quarters into chunks about 1-inch so they process evenly. You should have about 2 lb (roughly 6–8 medium apples) of apple pieces.
- 3
Blend or process
Place apple chunks in a blender or food processor in batches if needed. Add 1/4 cup of the cold water per blender batch to help the blades move and to control thickness. Pulse or blend at high speed until the apples are broken down into a coarse puree (not completely smooth if you plan to strain).
- 4
Extract juice (option A: blender + strain)
Line a wide bowl with a double layer of cheesecloth or a fine-mesh sieve set over a bowl. Pour the apple puree into the cloth/sieve. Gather the cloth edges and twist, pressing and squeezing with your hands to extract the juice into the bowl. Continue until most of the liquid is out and the pulp is relatively dry. If using a sieve, press the pulp with the back of a spoon to extract juice.

- 6
Clarify (optional)
For clearer juice, pour the strained juice through a coffee filter or a second layer of cheesecloth and let it drip into a container for 20–30 minutes. Alternatively, refrigerate the fresh juice in a covered container for 1–2 hours; foam and fine solids will settle and can be skimmed or decanted.
- 7
Sweeten and balance
Taste the juice. If it needs more brightness, stir in 1 tsp fresh lemon juice. If it’s not sweet enough, dissolve up to 1 tbsp granulated sugar in 1–2 tsp warm water and stir into the juice until dissolved. Adjust to taste.
- 8
Chill and serve
Refrigerate the juice until cold (about 30–60 minutes) or serve immediately over ice. Shake or stir before pouring if it has separated. Garnish with an apple slice or lemon wedge if desired.
- 9
Storage
Store fresh apple juice in an airtight container in the refrigerator and consume within 48–72 hours for best flavor and safety. For longer storage, freeze in freezer-safe containers leaving headspace.
Equipment / Notes
- 10
All ingredients correspond to the steps above: apples are prepped, blended or juiced, strained if desired, then adjusted with lemon and sugar. Use cheesecloth, fine sieve or juicer depending on desired clarity. Quantities are for about 4 servings.
