Preparation of Calamari

Clean the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

Prepare the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Add Water

Gradually pour in the cold water while whisking the dry ingredients until a smooth batter forms.

Frying the Calamari

Heat Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari

Dip each calamari ring into the batter, ensuring it is fully coated.

Fry the Calamari

Carefully place the battered calamari rings into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

Drain Excess Oil

Using a slotted spoon, remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil.

In a small bowl, combine the sweet chili sauce, lime juice, and chopped fresh cilantro. Stir well to combine.
