Method

Spicy Aioli

In a small bowl combine mayonnaise, sriracha, lemon juice, minced garlic, and smoked paprika. Whisk until smooth. Taste and adjust heat or acidity as needed. Refrigerate while preparing other components so flavors meld.

Hashbrown

Heat a nonstick skillet over medium-high heat. Add vegetable oil and swirl to coat the pan.

If using fresh grated potato, squeeze out excess moisture in a clean towel. Add shredded hashbrowns to the skillet and press into a compact patty about the size of your bun (~3–4 inches). Cook undisturbed 3–4 minutes until golden brown on the bottom.

Flip the hashbrown gently and cook another 3–4 minutes until crisp and cooked through. Season both sides with salt and pepper. Keep warm on a plate in a low oven (about 200°F / 90°C) or cover loosely with foil.

Egg & Sandwich Assembly

Split the bun or English muffin and toast it lightly in a dry pan or toaster until golden. Butter the cut sides lightly if desired.

In a small bowl whisk the eggs with 1/4 tsp salt and 1/8 tsp black pepper until homogeneous.

Heat a medium nonstick skillet over medium heat and add 1 tablespoon butter. Once foaming, pour in the beaten eggs. For folded/scrambled style: let eggs set for about 20–30 seconds, then gently stir with a spatula, pushing cooked edges toward the center until just-set but still moist, about 1–2 minutes. For a fried-style folded egg: tilt pan, let eggs set until edges solidify, then use spatula to fold or flip to cook through to desired doneness, about 1–2 minutes per side.

When the eggs are nearly done, place the cheddar on top so it melts into the eggs (cover pan briefly with a lid for faster melting). Remove eggs from pan and keep warm.

Assemble the sandwich: spread a generous tablespoon of spicy aioli on the top and bottom of the toasted bun. Place the hashbrown on the bottom bun, then the cheesy egg, then any optional add-ins (sliced avocado, bacon strips, or sausage patty). Top with the other bun half.

Press gently, slice in half if desired, and serve immediately while hot. Provide extra spicy aioli on the side if preferred.
